The chocolate used in our candies is pure Hawaiian chocolate produced from cacao beans grown in the rich volcanic soil of Hawaii. Whether you choose the complex 70% Wailua Estate, the 55% Semi-Sweet or the 35% Kokoleka Milk Chocolate, the result is a smooth, velvety texture and deep cocoa flavors.
Our macadamia nuts are sourced from small, independent growers from Kealakekua, Hawaii. The grower’s yield is in much smaller quantities, but the nut they produce has a rich, buttery texture not found anywhere else.We believe in creating our chocolates in the same painstaking way our family, beginning with our great-grandfather and grandfather, has always done it... lovingly by hand. Each and every confection is made with the finest chocolate and macadamia nuts available This process is more costly and time consuming than the mass-produced products available, but we believe it provides an exponential experience for true chocolate lovers.
Somewhere along the line, from when John Dye first created his magical confection, almost 85 years ago, something was lost. As with any product available today, once you sacrifice quality and uniqueness for production and market share the end product gradually becomes something other than what was originally intended. Now, we want to take what was created five generations ago and raise it to the next level.
When my family owned and operated Ellen Dye Can-dies, local ingredients such as what we use in our chocolates were either not available or in short supply. We feel that the chocolate, macadamia nuts, Hawaiian chili pepper, ginger, Hawaiian salt and other ingredients will transform the ordinary product found in every dis-count store on the planet into a truly unique Hawaiian experience.
